Ingredients

4 tablespoons olive oil

1 yellow onion, chopped

1 red bell pepper, chopped

1 Anaheim chile pepper, chopped

2 red jalapeno pepper, chopped

4 garlic cloves, minced

2 ½ pounds lean ground beef

¼ cup Worcestershire sauce

1 pinch garlic powder, or to taste

2 beef bouillon cubes

1 (12 fluid ounce) can or bottle light beer (such as Coors®)

1 (28 ounce) can crushed San Marzano tomatoes

1 (14.5 ounce) can fire-roasted diced tomatoes

1 (12 ounce) can tomato paste

½ cup white wine

2 tablespoons chili powder

2 tablespoons ground cumin

1 tablespoon brown sugar

·      1 tablespoon chipotle pepper sauce

·      2 ½ teaspoons dried basil

·      1 ½ teaspoons smoked paprika

·      1 teaspoon salt

·      ½ teaspoon dried oregano

·      ½ teaspoon ground black pepper

·      2 (16 ounce) cans dark red kidney beans (such as Bush's®)

·      1 cup sour cream

·      3 tablespoons chopped fresh cilantro

·      ½ teaspoon ground cumin

Step 1

Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.

Step 2

Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Stir beef mixture into pepper mixture.

Step 3

Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.

Step 4

Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.

Step 5

Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.

  4 sudu minyak zaitun

  1 bawang kuning, cincang

  1 lada bel merah, dicincang

  1 lada cili Anaheim, cincang

  2 lada jalapeno merah, cincang

  4 ulas bawang putih, cincang

  2 ½ paun daging lembu tanpa lemak

  ¼ cawan sos Worcestershire

  1 secubit serbuk bawang putih, atau secukup rasa

 2 kiub bouillon daging lembu

 1 (12 auns cecair) boleh atau botol bir ringan (seperti Coors®)

  1 (28 auns) dapat menghancurkan tomato San Marzano

  1 (14.5 auns) dapat tomato potong dadu bakar

  1 (12 auns) tin tomato pes

  ½ cawan wain putih

  2 sudu besar serbuk cili

  2 sudu besar jintan tanah

  1 sudu gula merah

 1 sudu besar sos lada chipotle

 2 ½ sudu teh basil kering

 1 ½ sudu teh paprika salai

 1 sudu teh garam

 ½ sudu teh oregano kering

 ½ sudu teh lada hitam tanah

2 (16 auns) tin kacang merah tua (seperti Bush's®)

 1 cawan krim masam

3 sudu besar ketumbar segar cincang

 ½ sudu teh jintan tanah

 

Petunjuk

  Langkah 1

Panaskan minyak dalam periuk besar di atas api sederhana; masak dan tumis bawang merah, lada belanda, lada Anaheim, lada jalapeno, dan bawang putih di dalam minyak panas hingga lembut.

 Langkah 2

Sementara itu, panaskan kuali besar di atas api sederhana-tinggi. Masak dan kacau daging lembu di dalam kuali panas hingga keperangan dan lumat, 5 hingga 7 minit; masukkan sos Worcestershire dan serbuk bawang putih. Hancurkan kiub bouillon di atas daging lembu dan masukkan bir. Terus masak, gosokkan sedikit kepingan dari bahagian bawah wajan, hingga cair panas, kira-kira 3 minit. Kacau campuran daging lembu ke dalam campuran lada.

 Langkah 3

Kacau tomato hancur, tomato dadu, pes tomato, dan wain ke campuran daging lembu. Musim dengan serbuk cili, 2 sudu besar jintan, gula merah, sos lada, kemangi, paprika, garam, oregano, dan lada hitam. Didihkan dan kurangkan panas hingga sederhana rendah. Tutup dan reneh sehingga daging dan sayur-sayuran sangat lembut dan perasa telah berkembang dalam cili, kira-kira 90 minit, kacau sekali-sekala.

Campurkan kacang ginjal ke dalam daging lembu dan sayur-sayuran. Terus reneh hingga kacang panas, lebih kurang 30 minit lagi.

 Langkah 5

Kisar krim masam, ketumbar, dan baki 1/2 sudu teh jintan dalam pemproses makanan hingga rata. Hidangkan campuran krim masam dengan cili.
